Dinner Tonight - Unstuffed cabbage

For dinner tonight I am making unstuffed cabbage. It has all the flavors of regular stuffed cabbage without all the work that's involved.It freezes really well and makes a lovely appetizer.  Enjoy!!!



3 lbs ground beef
2 eggs
1/4 cup water
3/4 cup white rice - uncooked
1 onion finely chopped
salt, pepper, garlic
1 tbs oil
1 head cabbage - shredded ( i used 2 bags)
1 1/2 tbs kosher salt
1 1/2 cup tom juice
4 - (8 oz) cans tomato sauce
1/2 cup brown sugar
1 1/2 cups sugar
1/2 cup lemons

In a large bowl mix together the first 6 ingredients. Set aside . In a large pot heat oil. Add in cabbage and salt and let simmer for 10 minutes. Add in rest of ingredients.  Gently form meat balls (they don't have to be perfect) out of the meat mixture and drop into pot. Simmer for 1 hour covered.

    cabbage is actually super easy to shred yourself. just use the food processor with the slicer blade (not shredder, or will be water!). one head of cabbage (costs abt $1) will get you 2 bags worth (~$6!)
    i remove and throw out the first few leaves cause those are yucky and tend to have the bugs. let me know if you try it

  2. I am all for saving $ ;-) but the Publix brand cabbage has a reliable hechsher and it was $1.29/bag so for a few cents it was not worth the effort....Thanks so much for the tip and please keep em coming!!!
