Eden Frozen Herb Cubes Review

As a product tester for Kosherscoop.com, I received a shipment from Eden Frozen Herbs and as instructed placed them in the freezer. They sent me five different packs - Parsley, Cilantro, Garlic, Basil, and Dill, I was so excited to use them! I looked for recipes this Shabbos that contained herbs so I could try out as many as possible. I used the garlic in several dishes; easy garlic sugar snap peas, Honey Garlic wings, and salad dressings. I used the parsley and basil in confetti corn and dill in cucumber salad. The herbs were extremely easy to use and tasted just like using fresh herbs. I got rave reviews and it was all eaten up!

Confetti corn:


Ingredients

  • 2 tablespoons good olive oil
  • 1/2 cup chopped red onion
  • 1 small orange bell pepper, 1/2-inch diced
  • 2 tablespoons unsalted butter ( i used margarine) 
  • Kernels cut from 5 ears yellow or white corn (4 cups)
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons julienned fresh basil, minced fresh chives, and/or minced fresh parsley leaves

Directions

Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.


Honey Garlic Wings

2-3 lbs chicken wings (i always have to make at least a double batch!)
pepper to taste
garlic powder to taste

sauce:
1/2 cup honey
1/4 cup soy sauce
1/2 cup ketchup
1/4 cup brown sugar
1-2 cloves garlic - chopped

preheat oven to 350. Spread wings in a roasting pan in a single layer and season with pepper and garlic powder. Bake covered for 45 minutes.
Meanwhile Whisk together sauce ingredients. Take wings out of oven and drain off liquid in pan. Pour sauce over wings and bake on 400 for 20 minutes on each side. 


Cucumber Salad

1/2 cup vinegar
1/2 cup sugar
1/2 cup mayo
1/2 tsp salt
2 tsp fresh dill (or 2 dill cubes)
8 kirbies - peeled and sliced
1/2 med red onion - cut into half moons
4 scallions sliced
Prepare dressing ing together and pour over veggies. combine well and serve - may be prepared a day in advance.
