Dinner Tonight - Potato and Cheese Latkes and Zeppolis

For dinner tonight I am making Potato Latkes and Cheese Latkes. For dessert I am making Zeppolis (thanks to my awesome bro and sis in law for this easy "cheating" way to make donuts for my family). I know its a lot of fried but hey, its Chanukah!!!! Enjoy!


2 lbs yukon gold potatoes
1 medium onion
1 large egg
1 1/2 tsp salt
pepper
oil for frying

Grate potatoes and onions. Add egg, salt and pepper. Fry in oil until golden on each side.


3 eggs
1 cup milk
1 cup cottage cheese
1 1/2 cups flour
1 tsp baking powder 
1/2 tsp salt
5 tbs sugar
1 tsp vanilla
oil for frying

Combine all ingredients together to form smooth batter. Fry in oil until golden brown on each side. 


1 lb store bought pizza dough cut into 12 pieces 
oil for frying 
confectioners sugar

Deep fry dough until golden brown. Roll in sugar.

Dinner Tonight - Stuffed Shells and Roasted Brussel Sprouts

For dinner tonight I am making stuffed (cheese) shells and Roasted Brussel Sprouts. I have also been busy baking for chanukah and trying out all my amazing products from Bakto Flavors (see more about that in my upcoming review). Enjoy!!!



1 box jumbo pasta shells cooked and drained according to directions

2 large containers ricotta cheese
2 large eggs
3 cloves garlic crushed
salt
pepper
dash of nutmeg

Combine all together and stuff pasta shells. Place 1 cup jarred marinara sauce in the bottom of a 9x13 pan. Place stuffed shells on top. Pour rest of jar of sauce on top and sprinkle with 1 bag 98 oz) shredded cheese. Bake for 45 minutes covered.



Brussel Sprouts:

2 tbs oil
1 tbs sesame oil
3 cloved garlic - crushed
1/2 tsp salt
1/2 tsp pepper
20 oz bag frozen brussel sprouts

Toss all together and roast in a 400 degree oven for 25-30 minutes.



Praline Crunch Toffee Bark:
40 saltine crackers
1 cup butter or margarine
1 cup brown sugar
1 bag chocolate/white chocolate chips
Betty Crocker Praline Crunch

Line the crackers on a greased cookie sheet. Met the margarine and sugar together and pour over crackers. Bake on 350 for 9 minutes. Take out of oven and sprinkle bag of chocolate chips on top. Put back in oven for an additional 2 minutes. Take out and immediately spread the chocolate out evenly over the crackers. Sprinkle with praline crunch and place in freezer. When hardened cut into shards.



I also tried out these chanukah cookies, that were featured in the Ami Magazine this past week, as a treat for my children. I could only find large chocolate coins so they kind of take over the cookie but other then that they came out cute.

Dinner Tonight - Baked Sesame Chicken

For dinner tonight I am making Baked Sesame Chicken. It's a lot less work then the fried kind and a lot healthier. I am serving it with rice. Enjoy!



2 lb chicken cutlets - cut into nugget size
1/3 cup flour
1/4 cup ketchup
1/2 cup brown sugar
1/4 cup vinegar
1/4 cup oil
1 tbs mustard
1/4 cup warm water
1 tbs sesame seeds optional

preheat oven to 350. Spray a 9x13 pan with pam. Place chicken in a ziplock with flour and shake until coated. Place in prepared pan. In a bowl mix together rest of ingrediants except for sesame seeds. Pour over chicken and sprinkle with seeds if using. Bake covered for 1 hour and uncovered for 15 minutes.

Dinner Tonight - Beef Stew

For dinner tonight I am making Beef Stew (from the new Susie Fishbein cookbook). It cooks for a pretty long time, making the meat very soft and tender. I am serving it over egg noodles. Enjoy!!!



2 lbs Beef Cubes
2-3 tbs flour
2 tbs oil
2 cups beef stock
1 cup water
1 tbs balsamic vinegar
1 tbs Worcestershire sauce
5 cloves fresh garlic peeled
3 bay leaves
2 medium onions peeled and sliced
1 1/2 tsp paprika
1 1/2 tsp black pepper
1 tsp sugar
1/2 tsp garlic powder
1/8 tsp allspice
3 large carrots peeled and sliced
3 stalks celery sliced
1 cup frozen peas
1 1/2 lbs baby white potatoes cut in half
1/4 cup cold water
2 tbs cornstarch

Sprinkle beef cubes with flour and shake off any excess. Heat oil in large pot and add beef. Brown on all sides. Add in stock, water, vinegar, Worcestershire  garlic cloves, bay leaves, onions, paprika, pepper, sugar, garlic powder and allspice. Bring to a boil, reduce heat, cover and simmer for 1 hour and 45 minutes. Remove and discard bay leaves and add in carrots celery, peas and potatoes. Cover and cook 40 minutes, stirring occasionally. Combine 1/4 cup water with cornstarch until smooth and add to pot. Cook until bubbly. Serve with a crusty hunk of bread or over egg noodles.

Dinner Tonight - Breaded Chicken and Sweet Potato Fires

For dinner tonight I am making Breaded Chicken with Sweet Potato Fries. This was a big hit with my kids. The chicken stays so moist and gets very soft. Enjoy!



8 pieces chicken - skinned
1/2 cup mayonnaise
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
corn flake crumbs

Combine mayo and spices. Spread on chicken parts and roll in crumbs. Bake on 400 degrees for 2 hours covered (uncover for the last 15 minutes)

3 sweet potatoes - sliced into french fry shape
3 tbs oil
1/2 tsp salt
1/2 tsp sugar
1/2 tsp parsley flakes

spread fries on cookie sheet and toss with oil. Bake on 400 degrees for 45 minutes. Toss with spices and serve.

Dinner Tonight- Crispy Salmon

For dinner tonight I am making crispy Salmon with mashed potatoes. It is an easy way to prepare the salmon but comes out with excellent results. Enjoy!!!



1 lb Salmon - skinned
salt and pepper
2 tbs soy sauce
2 tbs teriyaki sauce
2 tbs vinegar
2 tbs honey
squirt of mustard

Sprinkle salmon with salt and pepper and broil for 15 minutes. Combine rest of ingredients and pour over salmon lower oven to 350 and cook for additional 10 minutes.

Dinner Tonight - Asian Chicken Wings

For dinner tonight I made Asian Chicken Wings. I usually stick with the same Honey Garlic recipe so I hope this will go over as well. Enjoy!!!



3 lbs wings ( aprox 20 wings)
1/2 cup apricot jelly
5 tbs soy sauce
5 tbs red wine
1 tbs + 1 tsp sesame oil
3 cloves garlic - crushed
1 1/2 tsp ginger
1/4 tsp red pepper flakes

Preheat oven to 400. Combine jelly, soy sauce, wine, oil, garlic, ginger, and pepper flakes. Place wings on a jelly roll pan and brush with glaze. Bake for 35 minutes. Turn wings over and brush with more glaze. Broil for 2-4 minutes. If you want you can boil remaining glaze as a dipping sauce.

Dinner tonight - Franks and Rice

For dinner tonight I am making Franks and Rice. Its a super easy 1 pot meal that the kids will love. Enjoy!!!


1 pack hot dogs - sliced ( I used Turkey franks)
1 onion - Diced
1 green pepper - diced
1 red pepper- diced
1 tbs seasoned salt
2 cups white rice
1 carton (32 oz) Chicken stock/broth
oil

In large pan heat oil and saute hot dogs for a couple of minutes until starting to brown. Add in onions and peppers and sautee until veggies are tender and onion is translucent. Add in seasoned salt and rice and stir for a couple of minutes. Add in stock/broth and bring to a boil. Lower heat and let simmer for 20 minutes.

Dinner Tonight - Meat and Onion Pie

This is a "fancier" version of meat loaf with an onion ring kind of topping. The dates and Turkey pastrami are the kosher version of bacon and dates - they came out fabulous and look really fancy for an hours devour without all the hard work. All you do is wrap a piece of turkey pastrami around a date and bake it on cookie sheet for 15-20 minutes (until it gets crisp around the date).




2 lbs ground beef
1/4 cup bread crumbs
1 tsp chili powder
1 tsp thyme
1/2 tsp kosher salt
1/4 tsp black pepper
1 egg

combine all together and place in a 9' spring-form pan that has been sprayed.

Combine 1/2 cup ketchup, 1 tbs honey, 1/2 tsp Worcestershire sauce, and 1/4 tsp hot sauce and smear on top of meat mixture.

2 eggs
1 vidalia onion thinly sliced
2 tbs oil
2 tbs water
1/2 tsp kosher salt
1/4 tsp black pepper
1/3 cup flour
1/2 tsp baking powder
1 tsp onion soup mix

Combine all together and pour on top of meat mixture. Bake on 350 for 1 hour.

Cookbook Review - Kosher By Design: Cooking Coach


As always Susie Fishbein put together a wonderful cookbook with lots of insightful ideas and recipes. I love how she shows you how to stock your kitchen, as I am usually one who has to run to the store every day. I also really love how she shows you to transfer leftovers into new meals. There are so many beautiful pictures and each recipe is written out very clear and concise. She definitely is thinking outside the box in this book with interesting and unusual ingredients. She also shows some beautiful plating ideas and concepts, such as always having an odd number on each plate (it's more visually appealing), using white or earth tone dishes to allow the food to really take center stage, and using the same herb that is in the dish as a garnish on top. I also love how she has converted some traditional not kosher recipes (crab cakes and figs and prosciutto) into kosher attainable versions.  Susie puts an upscale twist on some classics -(Crustless meat and onion pie, Buffalo chicken salad, and southern fried chicken). She even includes a recipe for chocolate Almond Smooches (Almond kisses!!) which I too remember enjoying as a kid from the chocolate sales. I have tried out a couple recipes so far such as the Gooey Walnut Brownie Pie and the Herb Roasted Baby Peppers. The pie was very easy to make (it uses a Dunkin Heinz mix!!) and tasted pretty good as well. The peppers came out great (I couldn't stop eating them); the roasting brought out the natural sweetness in those yummy peppers. I can't wait to try out more recipes from this unique cookbook.

Dinner tonight- Ginger Chicken

For Dinner tonight I am making Ginger Chicken over spaghetti. Enjoy!!!



4 chicken breast fillets - cut into  nugget size
1/3 cup plain flour
1 tablespoon olive oil
1/2 cup unsweetened pineapple juice
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon ground ginger
2 teaspoons garlic, minced

Coat chicken pieces in the flour.
Heat oil in non-stick frying pan over medium-high heat.
Cook chicken 3-4 minutes per side, until lightly browned on the outside.
Meanwhile, mix pineapple juice, honey, soy sauce, ginger and garlic.
Pour over the chicken.
Cook, stirring constantly, until juices run clear when chicken is pierced and the sauce is slightly thickened.

Dinner Tonight - Pizza Bubble Ring

For dinner tonight I made Pizza Bubble Ring. It was my sisters wonderful idea (thanks Tzip!) and my kids gave it a two thumbs up! You can serve it with french fries and a salad or veggies.  It is super easy to prepare, my son even helped me. Enjoy!



2 lbs pizza dough (if making my recipe, you need a double batch)
1 stick butter
1/2 tsp garlic powder
1/4 tsp red pepper flakes
2 cloves garlic - minced
1/2 tsp. onion powder
1 tsp. oregano
1/2 tsp. pepper
8 oz cheese

Melt butter and add all spices. Divide dough into 40 balls. Place a bit of cheese in the center of each ball. Dip in butter/spice mixture. Place in a tube pan and bake on 350 for 35 minutes. Serve with Pizza sauce.

Dinner Tonight- Salmon Skewers

For dinner tonight I am making Salmon skewers with mashed potatoes. If you are short on time you can use store bought Italian Dressing but this homemade version is great. Enjoy!



12 oz salmon - skinned and cubed
6 tbs olive oil
2 tbs white wine vinegar
2 tbs fresh chopped parsley
1 tbs lemon juice
2 cloves garlic chopped
1 tsp dried basil
1/2 tsp oregano

Combine all ingredients and let marinate for 1/2 hour. Put on skewers (that have been soaked in water for 20 minutes) and grill for 4 minutes on each side brushing frequently with reserved Italian dressing.

Dinner Tonight - Sweet Salami and oven Rice

For dinner tonight I am making sweet salami and Oven rice. This is my children's favorite way to have their rice prepared. Enjoy!





Sweet Salami:

1 bullet salami
1 cup apricot jam
1/2 cup brown sugar
1/2 cup honey mustard
1/2 cup honey

slice salami but don't cut all the way through. Mix rest of ingredients together and bake uncovered on 350 for 45 minutes - 1 hour.

Oven rice:

Place the following into a square pan:

1 cup rice
1/2 stick margarine
2 1/2 cups water
5 tsp onion soup mix

bake covered on 350 for 1 hour.

Dinner Tonight - Cracker coated chicken nuggets

For dinner tonight I am making cracker coated chicken nuggets. Its a twist on the regular ones I usually make. Enjoy!



2 lbs cutlets - cut into nugget size
oil
1 sleeve snackers crackers - crushed
honey

Dip cutlets into oil then crackers. Bake on sprayed cookie sheet for 15 minutes. Drizzle generously with honey and bake an additional 10-15 minutes.

Dinner Tonight - Happy Birthday B!!!

My husbands birthday is today. For dinner tonight I was trying to make something special. I started out with Fresh dinner rolls and garlic "butter" (margarine), along with a pesto salad in won ton cup (awesome new recipe from my sis in law). Then I made a grilled steak with Garlic and Shallot smashed potatoes and roasted asparagus. For dessert I made a custard cream pie. It was all delicious! If you want any of the recipes let me know.

Review on Edgeware Zester

I received my Edgeware zester and couldn't wait to try it out.  I came upon a recipe from the new cookbook Chic Made Simple and thought  this was a great opportunity to try my new zester.  I tried the Carrot Muffins which require orange zest. What I loved about this kitchen tool is the ease in which it took the zest off the orange and I especially loved that it has a measuring compartment attached.  This is definitely a kitchen tool I will use over and over again and highly recommend. I am including the recipe and a picture. Thanks for giving me the opportunity to test this wonderful product.

[Ingredients:] 
1 cup whole wheat flour
1 cup all purpose flour
1 lb (16 oz. bag) fresh carrots, finely grated
1 cup sugar or sugar substitute
¾ cup canola oil
¼ cup orange juice, fresh or bottled
1 orange, zested (optional)
4 eggs
2 Tbsp lemon juice
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
½ tsp cinnamon
½ tsp salt

[Directions:]

1. Preheat the oven to 350°F. In the bowl of an electric mixer, or with a hand mixer, beat the flours, carrots, sugar, oil, orange juice, orange zest, eggs, lemon juice, baking powder, baking soda, vanilla extract, cinnamon, and salt until well combined, about 1 - 2 minutes. Pour the batter into a 12 generously greased muffin tin (or 2 greased disposable muffin tins) , filling the cups two - thirds full.
2. Bake for 22 - 25 minutes until the center tests clean with a toothpick. Do not over bake. Allow to cool on a wire rack. Store in an airtight container for maximum freshness.

Yields: 12 muffins

Dinner Tonight - Franks and Beans

Giving a demonstration tonight by a local event so I needed a quick easy dinner. I threw together this quick Franks and Beans. I know the kids and adults will both be happy. Enjoy!



1 large can beans
1 pack hot dogs cut up
1/3 cup brown sugar
1/4 cup lemon juice
1 onion sliced into half moons
colored peppers cut into strips

 Combine all in a pan and bake for 2 hours covered.

Dinner Tonight - Sweet Chicken and Cauliflower

For dinner tonight I am making sweet chicken and "breaded" cauliflower. Be sure to double the cauliflower recipe because you won't stop popping these.  Enjoy!!!



Chicken:

2 lb's chicken cutlets - cut into bite sized pieces
cornflake crumbs 

coat chicken in crumbs and bake in a single layer for 1/2 hour.

1 onion chopped
1 stalk celery chopped
2 tbs margarine
2 tbs lemon juice
2 tbs vinegar
2 tbs brown sugar
1/2 tsp mustard
1 cup water
1 cup ketchup
salt and pepper

saute onion and celery in margarine. Add rest of ingredients and bring to boil. Pour over chicken and bake for 45 minutes - 1 hour.

Dinner Tonight - Grilled chicken over Sesame Noodles

For dinner tonight I am making Grilled Chicken Over Sesame Noodles. It is a quick easy dish that's always a big hit. Enjoy!



Sesame Noodles:
1 lb spaghetti - cooked and drained according to directions
Add to it:
1/2 cup soy sauce
1/2 cup sesame oil
1/3 cup sugar
3 scallions - thinly sliced
1/4 cup sesame seeds

Chicken:
1/4 cup soy sauce
1/4 cup teriyaki sauce
2 cloves garlic minced
1/4 cup sugar
1/4 tsp ginger
4-5 chicken breast

marinate chicken in all ingredients for 2-3 hours. Grill (indoors our out) or saute or broil until cooked through.

Dinner Tonight - Chicken Pot Pie

For dinner tonight I am making Chicken Pot Pie. Its a hearty meal for a stormy night. Hope you are all safe and well. Enjoy!

6 Tbsp. margarine
1 medium onion, diced
1 potato, diced
1/2 cup thinly sliced, carrots
6 Tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
2 1/2 cups chicken stock
2 cups diced boneless, skinless chicken (dice it raw)
2 pie crusts

In 2-quart saucepan, heat margarine until it melts, add onion, potato, and carrots and saute until tender. Sting in flour, salt, and pepper and mix quickly and well. Over medium heat, gradually stir in chicken stock, stirring constantly to made a thick, creamy sauce. Add chicken and peas. Pour entire mixture into a 2-quart casserole or into bottom pie crust.

Preheat oven to 350 degrees.
Place (other) crust over the mixture, piercing with forks near the center. Bake for 40 minutes, or until crust is browned.
