Dinner Tonight - Franks and Beans

For dinner tonight I am making Franks and Beans. Its a super quick/easy meal to throw together while I am cooking for shabbos. Enjoy!

1 large can baked beans
1 pack hot dogs (I used chicken)
1/3 cup brown sugar
1 onion sliced in half moons
colored peppers
1/4 cup lemon or pickle juice

Mix all together in a pan and bake covered for 2 hours or more (the longer the better)

Dinner Tonight - Skewers

For dinner tonight I am making Skewers! These can be be made with chicken cutlets or meat and veggies too if you like. I am serving over rice with a salad. Enjoy!



 Marinade: 3 tbs ketchup, 3 tbs soy sauce, 2 tbs brown sugar, 2 tbs oil, 1 tbs vinegar, 1 1/2 tbs onion soup mix, garlic powder to taste, 1 1/2 lbs chicken or meat, wooden skewers soaked in cold water for 1 hour....combine marinade. add chicken/meat and cover and refrigerate for 1 hour - over night. preheat oven to broil. thread chicken onto skewers, place on a baking sheet and broil for 5 minutes on each side.

Dinner Tonight- Savory Cranberry Turkey wraps

For dinner tonight I am making Savory Cranberry Turkey Wraps. It is an easy light meal that gets you out of the kitchen on a hot day. It also makes a great lunch! Enjoy!

1 cup chili sauce
1/2 cup fresh or frozen (defrosted) cranberries

simmer in a small pan over med heat for about 5 minutes. Remove from heat and cool

8 wraps
lettuce
avocados
scallions
sliced turkey breast

on a wrap place a couple tbs of the cranberry mixture, some lettuce, avocado, scallion and 4 slices of turkey. wrap in plastic wrap and put in fridge for 15 minutes. cut diagonally and serve.

Dinner Tonight- Pasta Quattro Formaggio

Hey guys!!! Sorry I haven't posted in a week (I was out of town). For dinner tonight I am making Pasta Quattro Formaggio (pasta with four cheeses). Enjoy!

1 lb penne pasta - cooked according to directions

2 1/2 cups milk

1 cup mascarpone cheese

2 tbs flour

1/8 tsp nutmeg

1/2 cup grated romano cheese

1/2 cup grated parmesean

1/8 tsp pepper

1/8 tsp salt

1 cup mozzarella

pour milk mascarpone flour and nutmeg into a med pot. cook over med heat, whisking the whole time for 8 minutes. Add the romano and parmesean cheese and whisk for another 2 minutes. Add white pepper salt and mozzarella and whisk until sauce is smooth and cheeses are melted. pour over pasta, toss to coat and serve right away.

Dinner Tonight - shabbos 8/17

We are having a very low key shabbos. Staying home tonight (just us!) and going out for lunch. Did not want a lot of leftovers in the house so I didn't make much. Challah and Chumus, Duck Sauce chicken, Yerushalmi Kugel, Potato Kugel and Oreo brownies. Have a beautiful shabbos!!!

Dinner Tonight - Potato Crepe with Mozzarella Cheese Sauce

For dinner tonight I am making Potato Crepe with Mozzarella Cheese sauce. "A gourmet short cut" , as the cook book calls this. Serve with a salad to round it out. Enjoy!!!

12 frozen potato blintz

place in a 9x13 pan

melt 4 tbs butter add in 1/4 cup chopped onion and cook until tender.  Add  1/4 cup flour , 1/4 tsp salt  and 2 1/2 cups milk. Stir constantly until thick and bubbles about 5 min. Add in 1 cup shredded mozzarella cheese until well melted. Pour over potato  blintzs and bake for 25 minutes covered.

Dinner Tonight - pasta with turkey

For dinner tonight I am making pasta with turkey. It is a simple one dish meal. Enjoy!

Ingredients

- 1 box linguini - cooked and drained according to directions - 1/2 package mushrooms - sliced - 1 roasted red pepper - 1/2 tsp. cumin - salt - pepper - smoked turkey or pastrami - cut in chunks - 1 scallion - dash of cayanne pepper

- 1/2 tsp parika

Instructions
	Sautee mushrooms with seasoning for 3 minutes.
	Add meat, pepper and scallions and cook for 1 minute.
	Toss with pasta.

Dinner Tonight - Pepper Steak

For dinner tonight I am making Pepper Steak. I have made many different varieties over the years but I love this recipe because, you just dump everything into the pan and bake. no sitting over a hot stove and no worrying that the meat will be tough. Enjoy!

1 lb pepper steak
1 onion - cut in half moons
1 red pepper cut into strips
1 cup duck sauce
3 tbs soy sauce
4 cloves garlic - crushed
salt and pepper

place meat in the bottom of a 9x13 pan. sprinkle with salt and pepper. place the onions and peppers on top. Combine rest of ingredients to form sauce and pour over meat. Bake covered for 2 hours. (this dish can also be prepared in a crock pot.

Dinner Tonight - Grilled Apricot Balsamic Shnitzel

For dinner tonight I made Pita with Grilled Apricot Balsamic Shnitzel and chips. This apricot balsamic glaze has just the right amount of sweetness with a little zing to it. Combined with freshly made chips and stuffed into a pita, it makes a delightfully filling, all-in-one supper. Enjoy!!!

Ingredients

1 lb (½ kilo) chicken breasts, cut into strips

frozen French fries

6 fresh pitas

Glaze

1 Tbsp oil

6 Tbsp apricot preserves

3 Tbsp balsamic vinegar

1/4 tsp cayenne pepper or 3 drops hot sauce, or to taste

1/8–¼ tsp chopped fresh rosemary

½ tsp kosher salt

black pepper, to taste (optional)

Pickled Onions

1/2 cup thinly sliced purple onion

1/4 cup red wine vinegar

2 tsp sugar

1 tsp salt

Directions

1.  Place all glaze ingredients in a small pot. Stir to combine. Bring to a boil, reduce heat to medium-low, and simmer, stirring occasionally, until slightly thickened, about 3–5 minutes. (This can be done a day or two in advance, but the glaze might have to be warmed slightly before using.) Pour into a medium-sized bowl.

2.  Marinate schnitzel pieces in glaze for approximately ½ hour. Grill for a few minutes or until done.

3.  Meanwhile, prepare chips (French fries) according to package directions. 

4.  For the pickled onions, bring the vinegar, sugar, and salt to a boil. Add the onion and return to a boil. Close fire. Pour into a stainless steel or glass bowl to cool for 15 minutes. Drain and refrigerate. 

5.  Slice pitas in half. Fill with schnitzel and chips. If desired, add pickled onions as well.

Dinner Tonight - Pizza Bubble Ring

For dinner tonight I made Pizza Bubble Ring. It was my sisters wonderful idea (thanks Tzip!) and my kids gave it a two thumbs up! You can serve it with french fries and a salad or veggies.  It is super easy to prepare, my son even helped me. Enjoy!

2 lbs pizza dough (if making my recipe, you need a double batch)

1 stick butter

1/2 tsp garlic powder

1/4 tsp red pepper flakes

2 cloves garlic - minced

1/2 tsp. onion powder

1 tsp. oregano

1/2 tsp. pepper

8 oz cheese

Melt butter and add all spices. Divide dough into 40 balls. Place a bit of cheese in the center of each ball. Dip in butter/spice mixture. Place in a tube pan and bake on 350 for 35 minutes. Serve with Pizza sauce.

Dinner Tonight - Chicken with Farfel

Here is a twist on the traditional chicken and rice dish. For dinner tonight I made chicken with farfel. It is a great one dish meal. All you have to do is add a salad or veggie and you are all set. Enjoy!

Ingredients

- 2 chickens cut into pcs. - 5 Tbs. onion soup mix - 10 oz apricot preserves - 1 small bottle russian dressing - 1 can mushrooms (optional)  - 2 packs farfel - 4 cups boiling water

Instructions
	Pour farfel into bottom of a pan. Place chicken on top and sprinkle wit 3 Tbs. soup mix. Add water.
	Mix preserves, dressing and rest of soup mix. Pour 1/2 of mixture over chicken. Cover and bake on 350 for 1 hor.
	uncover, glaze with rest of sauce mixture and bake for additional 45 minutes.

Dinner Tonight - Taco Bar

For dinner tonight I am making a taco bar. I am serving hard and soft tacos, shredded lettuce, chopped tomatoes, red onion, guacamole, chilies, parve sour cream, salsa,  and of course the meat (browned and added ortega taco seasoning packet). Dinner Tonight - Pesto Pizza

We often go to a restaurant that makes great Pesto Pizza. For dinner tonight I am trying to replicate it. I made a batch of pizza dough and smeared with pesto and covered with cheese. Serve it with french fries and a salad to make it a complete meal. I am not posting a picture of the finished product because I want it to come straight out of the oven when my husband is ready to eat it. Enjoy!

Pizza Dough

Ingredients

- 1/4 oz yeast - 1 cup warm water - 1 tsp. sugar - 1/2 tsp. salt - 2 Tbs. oil - 2 1/2 cups flour

Instructions
	Dissolve yeast and sugar in water.
	Add rest of ingrediants and mix to form dough.
	Let stand for 1/2 hour. Roll out and top with cheese and sauce.
	Bake on 350 degrees for 25 minutes. Pesto: 2 cups fresh Basil leaves 1/2 cup pine nuts 4 cloves garlic 1 cup oil salt pepper Blend all together in food processor.

Instructions
	Put rice in bottom of 9x13 pan.
	Sprinkle with soup mix and add water.
	Place chicken on top and sprinkle with spice.
	Bake coveed for 1 hour 45 minutes and uncovered for 15 minutes on 350 degrees.
