Menu Ideas for Rosh Hashana

While many of us are still in denial, Rosh Hashana is less then then six weeks away. I am listing a bunch of menu ideas that can be frozen/made in advance ( I am putting a * next to everything that can be frozen). I tried to incorporate as many of the simanim as possible.  If you need any recipes that aren't posted, let me know! Hope this helps out.

  2. Honey Cookies


    Ingredients
    -
    2 sticks margarine
    -
    1 cup brown sugar
    -
    1 tsp. vanilla sugar
    -
    2 eggs
    -
    4 1/4 cups flour
    -
    1 tsp. cinnamon
    -
    2 tsp. baking soda
    -
    6 Tbs. honey

    Instructions

    Preheat oven to 350 degrees.

    Cream margarine with sugar. Add eggs and mix.

    Add rest of ingrediants and combine. Form into balls and place on lined cookie sheet.

    Bake for 12 minutes.

  3. Brisket:


    Ingredients
    -
    3-4 lb. brisket
    -
    8 md. onions sliced
    -
    1 cup ketchup
    -
    10 oz ginger ale
    -
    1/2 cup red wine
    -
    2 Tbs. onion soup mix

    Instructions

    Place sliced onions in large pan. Put brisket on top of onion.

    combine rest of ingrediants to make sauce.

    Pour over meat.

    Bake covered for 2-2 1/2 hours on 350 degrees.

  4. Honey Garlic Wings:

    2-3 lbs chicken wings (i always have to make at least a double batch!)
    pepper to taste
    garlic powder to taste

    sauce:
    1/2 cup honey
    1/4 cup soy sauce
    1/2 cup ketchup
    1/4 cup brown sugar
    1-2 cloves garlic - chopped

    preheat oven to 350. Spread wings in a roasting pan in a single layer and season with pepper and garlic powder. Bake covered for 45 minutes.
    Meanwhile Whisk together sauce ingredients. Take wings out of oven and drain off liquid in pan. Pour sauce over wings and bake on 400 for 20 minutes on each side.

  5. Hawaiian Chicken:


    Ingredients
    -
    2 tbs oil
    -
    1 carrot - sliced
    -
    1 onion - diced
    -
    1 green pepper - diced
    -
    3/4 cup ketchup
    -
    1 Tbs soy sauce
    -
    1/4 cup sugar
    -
    1/2 can crushed pineapple
    -
    2 lbs chicken cutlets

    Instructions

    Sautee Veggies in oil until tender.

    Add in ketchup, soy sauce, sugar, and pineapple.

    Bring to a boil. Pour over chicken.

    Bake for half hour on 350 degrees.

  6. BBQ Beef Cubes:


    Ingredients
    -
    3 lbs beef cubes
    -
    4 onions -sliced
    -
    1 cup ketchup
    -
    1 cup duck sauce
    -
    1/2 cup bbq sauce
    -
    1/4 cup brown sugar

    Instructions

    Boil beef in large pot with spices (salt, pepper, onion and garlic powder) and water to cover.

    Saute onions until browned. Place in pan with beef cubes.

    Mix remaining ingredients together to make a sauce. Pour over beef.

    Bake covered for 1-2 hours (the longer the better.)

  7. Cabbage Wontons
    ‎16 oz cabbage or cole slaw mix
    1 tsp salt
    1 tsp pepper
    2 tsp sugar
    1 large onion
    sautee the onion and cabbage until translucent add spices and cook down a bit more...fill wonton wrappers and fry

  8. Pastrami Knish:

    Ingredients
    -
    2 lg onion
    -
    2 pks pastrami
    -
    3/4 cup mayonaise
    -
    1/4 cup mustard
    -
    36 puff pastry squares

    Instructions

    sautee onions. Add pastrami cut up into pieces. Add in mayo and mustard.

    Put filling into squares. Bake on 350 until browned (20-25 min)

  9. stuffed chicken:


    Ingredients
    -
    1 large or 2 small carrots
    -
    1 large onion
    -
    2 stalks celery
    -
    4 oz mushrooms
    -
    2 slices bread
    -
    1 egg
    -
    onion powder
    -
    garlic powder
    -
    salt

    -
    pepper
    -
    whole chicken cut into 1/4's
    Instructions

    Chop up all veggies into small pcs. Sautee veggies till soft.

    Pour water over bread and wait a few minutes till liquad is absorbed. Squeeze out excess liquad.

    Mix vegetables with bread, egg and spices.

    Stuff chicken and bake for 1 1/2 - 2 hours covered on 350 degrees.

    Ingredients
    -
    3 eggs - seperated
    -
    1 Tbs. Vanilla sugar
    -
    1/2 cup sugar
    -
    1 tsp. salt
    -
    3 sticks margarine
    -
    6 cups flour
    -
    2 tsp. baking powder
    -
    1/4 cup juice
    -
    1/2 cup seltzer

    -
    1/2 cup water
    -
    1/2 oz yeast
    -
    cinnamon and sugar mixture
    Instructions

    Mix all ingrediants together. (leave egg whites aside)

    Roll out and brush with egg white.

    Fill with a cinnomin sugar mixture.

    Roll up and brush with egg white. Bake for 18 minutes on 350 degrees.

  11. Lemon dipped rugelach:

    Ingredients
    -
    9 1/2 cups flour
    -
    3/4 oz yeast
    -
    6 Tbs. sugar
    -
    1 lb margarine
    -
    4 eggs
    -
    1 1/2 cups water
    -
    1 tsp. salt
    -
    Glaze-
    -
    6 Tbs. vanilla sugar

    -
    4 cups warm water
    -
    3 cups sugar
    -
    1/2 cup lemon juice
    Instructions

    Activate yeast with sugar and water. combine with rest of ingrediants till dough forms.

    Let rise for 1 hour. Roll out and make into rugelach shape. Brush with egg and bake for 30 minutes on 350 degrees.

    Combine all glaze ingrediants. Dip warm rugelach into glaze for 1 minute.

    Let dry before eating.

    Ingredients
    -
    16 oz thin noodles
    -
    4 eggs
    -
    2 medium onions - fried
    -
    1/2 cup oil
    -
    1 1/2 tsp. salt
    -
    1/4 tsp. pepper
    -
    1/2 cup brown sugar
    -
    1/2 cup flour

    Instructions

    Cook noodles for 3 minutes. Drain and rinse.

    Add rest of ingrediants.

    Bake in a greased 9 x 13 pan for 1 hour on 350 degrees.

  14. Lemon Herb Chicken



    Ingredients
    -
    2 oz lemon juice
    -
    1/2 cup oil
    -
    1 Tbs. garlic powder
    -
    1 Tbs. onion powder
    -
    2 Tbs. sugar
    -
    pinch of pepper
    -
    pinch of basil
    -
    pinch of oregano
    -
    1/2 tsp. salt

    -
    Chicken cutlets
    Instructions

    Mix all ingredients together besides for cutlets.

    Marinate cutlets for 8 hours or overnight.

    Broil, bake or grill cutlets.

  16. Onion Roll

    Ingredients
    -
    1 large onions
    -
    salt
    -
    1/2 cup sugar
    -
    1 egg
    -
    1 puff pastry sheet

    Instructions

    Sautee onions with salt.

    Add in sugar and sautee some more.

    Let cool and add in egg.

    Put in pastry sheet and roll up. Bake on 350 for 1/2 hour.

    Ingredients
    -
    Crust-
    -
    1 packet graham crackers
    -
    1 tsp. vanilla sugar
    -
    4 squares rosmarie chocolate
    -
    1 Tbs. water
    -
    Filling-
    -
    Remainder bar of chocolate
    -
    1 1/2 sticks margarine
    -
    4 eggs

    -
    3/4 cup sugar
    -
    1 container whip topping
    Instructions

    Blend all crust ingrediants in a blender. Put aside half cup of crumbs. Pat rest into a 9' round pan. Bake for 8 minutes on 350 degrees.

    Melt filling ingrediants together. Pour ontop of pie crust. Freeze

    Whip topping and put ontop of chocolate mixture.

    Sprinkle with remaining crumbs. Freeze.

  19. Peanut Butter Crumb Pie

    Ingredients
    -
    1 graham cracker crust
    -
    1 cup confectioners sugar
    -
    1/2 cup peanut butter
    -
    1 package vanilla pudding mix
    -
    8 oz non dairy creamer
    -
    1 container whip topping

    Instructions

    Mix sugar and peanut butter together to form crumbs. Put 1/2 crumb mixture into pie crust.

    Mix pudding with creamer and pour into pie crust. Freeze till hardens.

    Whip up topping and put ontop of pudding mixture.

    Sprinkle with remaining crumbs. Freeze.

  20. Strawberry Dessert:

    Ingredients
    -
    1 bag unsweetened strawberries
    -
    1 cup orange juice
    -
    1 cup sugar
    -
    10 oz whip
    -
    1 cup non dairy creamer
    -
    1 package vanilla pudding mix

    Instructions

    Mix strawberries with the orange juice and sugar. Place 2/3 into a pan. Freeze.

    Whip topping and mix with creamer and pudding.

    Pour ontop of frozen juice mixture.

    Drizzle with rest of oj mixture. Freeze.

  25. Buttnerut Squash Kugel
    Ingredients
    -
    4 box frozen butternut squash
    -
    1 cup sugar
    -
    1 cup soy milk
    -
    1 cup flour
    -
    5 eggs

    Instructions

    Combine all ingrediants together.

    Pour into greased pan and sprinkle cinnamon on top.

    Bake on 350 degrees for 1 1/2 hours.

  26. Parsnips

    Ingredients
    -
    1 lb pasnip - peeled and sliced
    -
    margarine to taste
    -
    salt
    -
    pepepr
    -
    1/4 cup brown sugar
    -
    2 Tbs. parsley

    Instructions

    Boil parsnip in 1/2 cup slightly salted water until soft. Drain.

    Add all remaining ingrediantsand stir until desired consistency.

  27. Doughless potato knish

    Ingredients
    -
    8 potatoes - peeled cooked and mashed
    -
    2 cups flour
    -
    3 eggs
    -
    salt
    -
    pepper
    -
    onion powder
    -
    garlic powder
    -
    1 onion - sauteed
    -
    1 tsp. sugar

    -
    sesame seeds
    Instructions

    Mix flour with mashed potatoes, 2 eggs, spices and onion.

    Put in a 9 x 13 pan.

    Mix last egg with sugar. brush ontop of potatoes.

    bake on 350 degrees for 45 minutes - 1 hour.
