Dinner Tonight - Potato Crepe with Mozzarella Cheese Sauce

For dinner tonight I am making Potato Crepe with Mozzarella Cheese sauce. "A gourmet short cut" , as the cook book calls this. Serve with a salad to round it out. Enjoy!!!


12 frozen potato blintz
place in a 9x13 pan

melt 4 tbs butter add in 1/4 cup chopped onion and cook until tender.  Add  1/4 cup flour , 1/4 tsp salt  and 2 1/2 cups milk. Stir constantly until thick and bubbles about 5 min. Add in 1 cup shredded mozzarella cheese until well melted. Pour over potato  blintzs and bake for 25 minutes covered.
