Dinner Tonight - Shabbos Menu 5/11

This week we are having a very low key Friday night. I kept the menu very simple: Challah, Tomato dip, Chumus, Avocado dip, and garlic dip. The main course is Hawaiian Chicken (thanks Meira!), Barley casserole, zucchini muffins (that I made and froze earlier in the week) and a salad. For dessert I made Peanut Butter Bars.  Have a beautiful and restful Shabbat!

Ingredients

2 tbs oil

1 carrot - sliced

1 onion - diced

1 green pepper - diced

3/4 cup ketchup
-
1 Tbs soy sauce
-
1/4 cup sugar
-
1/2 can crushed pineapple
-
2 lbs chicken cutlets

Instructions
Sautee Veggies in oil until tender.
Add in ketchup, soy sauce, sugar, and pineapple.
Bring to a boil. Pour over chicken.
Bake for half hour on 350 degrees.





Ingredients

- 1/2 cup oil
- 1/2 cup chunky peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tbsp vanilla
- 1 egg
- 1/2 cup flour
- 1/2 cup old fashioned oats
- 1/2 tsp baking soda
- pinch salt
- 1/3 cup chocolate chips

Instructions 

Preheat oven to 350 degrees.
In the bowl of a mixer combine oil, peanut butter, and sugars. Gradually add in rest of ingredients. 
Spray a 9x13 pan with cooking spray. Press batter into pan and bake for 40 minutes. Let cool and cut into squares.
