Zucchini Muffins

I had Zucchini left in the fridge that I didn't want to go to waste. I decided to make zucchini muffins which are my kids favorite! Its a great way to sneak in some veggies to your kids diet without them even realizing. They also freeze wonderfully!


Ingredients
-
2-3 zucchini - grated
-
1 1/2 cup sugar
-
2 cups flour
-
3 eggs
-
2 tsp. baking powder
-
1 Tbs. vanilla
-
1 tsp. cinnomin
-
1 tsp. salt
-
1 cup oil (or 1/2 oil 1/2 applesauce)
 


Instructions
 
Combine all ingrediants together.
 
Fill muffin tins.
 
bake for 35 minutes on 350 degrees.
