Dinner Tonight - Cream of Corn Soup and Sandwiches

For Dinner tonight I am making soup and sandwiches!!! The soup is a cream of corn soup that is so simple to make and so delicious!!! The Sandwiches Start with a big crusty baguette (i got the Le Petit Francois that you get in costco and finish off in the oven for a fresh taste). Then I made homemade pesto to spread on it. There are several different toppings to choose from: Avocado, Feta cheese, hard boiled eggs, tomatoes, sweet onion, and sweet red peppers. I like avocado with feta, peppers, tomato, lettuce and sweet onion. My hubby likes eggs on his and the kids will prob just want avocado.  Its such a  versatile meal you can make it up however you like! Hope you all enjoy!!!





Pesto:
2 cups fresh Basil leaves
1/2 cup pine nuts
4 cloves garlic
1 cup oil
salt
pepper

Blend all together in food processor.


Cream of Corn Soup:


Ingredients

1 minced onion
-
1 Tbs. butter
-
1 can creamed corn
-
1/8 tsp. pepper
-
1 Tbs. flour
-
1 tsp. salt
-
1 ½ cup milk

Instructions
Sautee onion in butter for five minutes.
Sprinkle with flour and gradually add milk.
Stir constantly until mixture boils.
Add corn, salt, and pepper and cook ten minutes.
