Dinner Tonight - Spinach and Shells

For dinner tonight I am making Spinach and shells with Mushroom Onion Quiche (thanks Yentel!!!) and Chinese Cole slaw. I spent the day in the kitchen baking so look out for those pics in a bit. Enjoy!!!



Spinach and Shells

1 box shell pasta cooked and drained according to directions
1 box frozen spinach, defrosted and liquid squeezed out
15 oz container ricotta cheese
2 cloves garlic minced
1 large egg
1/2 tsp salt
1/4 tsp pepper
2 cups marinara sauce, divided
4 oz shredded cheese

Combine the ricotta, garlic, egg, salt and pepper. Stir together with the pasta. On the bottom of a 9 x 13 pan place 1 cup sauce. Pour pasta mixture on top and top with remaining sauce. Sprinkle evenly with cheese and bake for 25-35 minutes until cheese is melted and bubbly.

Mushroom Onion Quiche

Ingredients

Frozen pie crust

2 large onions - diced

1 lg container mushrooms
-
munster cheese
-
chedder cheese
-
1 cup warm milk
-
1/2 cup flour
-
3 eggs
-
salt
-
pepper

Instructions
Sautee onions and mushrooms.
Layer in pie crust alternating with cheeses.
combine milk, flour, eggs, and spices to form batter.
Pour into crust and bake for 40 minutes on 350 degrees.
