Dinner Tonight - Thai Chicken Burgers and Confetti Corn

For dinner tonight I am making Thai Chicken Burgers with a curry mayonnaise and  confetti corn. This is the best corn I have ever tasted! Enjoy!



Burgers:
2 lbs ground chicken
1/4 cup bread crumbs
1 egg
1/4 tsp basil
1/4 tsp garlic powder
1/4 tsp salt
1/8 tsp. black pepper
1/8 tsp ground ginger
pam
6 hamburger buns
1 Avocado sliced

Mix chicken with crumbs, egg and spices. Spray a grill pan with pam and heat pan until hot. Cook the burgers for 3-4 minutes per side.

Curry Mayonnaise:

1/4 cup mayo
2 tbs. creamy peanut butter
1/2 tsp. curry powder

Mix all mayo ing's together.  Spray on the bottom half of the bun. Top with a burger and avocado.


Confetti corn:


Ingredients

  • 2 tablespoons good olive oil
  • 1/2 cup chopped red onion
  • 1 small orange bell pepper, 1/2-inch diced
  • 2 tablespoons unsalted butter ( i used margarine) 
  • Kernels cut from 5 ears yellow or white corn (4 cups)
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons julienned fresh basil, minced fresh chives, and/or minced fresh parsley leaves

Directions

Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.
