Dinner Tonight - Turkey Zucchini Meatloaf

For dinner tonight I am making a wonderful Turkey Zucchini Meat loaf that my sister in law introduced me to (thanks Leah!!!) It is a healthier alternative to chopped meat and is so moist from the zucchini (which your kids will not even notice!). It also has  a glaze which adds such a  nice flavor.  I am making baked sweet potatoes and Chinese Cole Slaw to go with it. I love making this "slaw" cause you can make it several hours in advance, just add the nuts/seeds right before serving. Enjoy!




Turkey Zucchini Meat Loaf

Ingredients

1 1/4 lbs ground turkey

1 cup coarsley grated zucchini

3/4 cup finely chopped onion
-
1/2 cup seasoned breadcrumbs
-
1/4 cup chopped parsley
-
1 large egg
-
1 tsp. salt
-
1/2 tsp. pepper
-
1/2 tsp. garlic powder
-
1/4 cup peach preserves
-
4 tsp. dijon mustard

Instructions
Preheat oven to 350. combine first 9 ingrediants in large bowl and mix well.
Shape mixture on rimmed baking sheet into a loaf shape. Bake for 45 minutes.
Remove from oven Stir preserves and mustardin small bowl to blend. Spread glaze over top of meatloaf.
Bake an additional 20 minutes. Cut into slices before serving.



Chinese Cole Slaw


Ingredients
-
1.5 bags cabbage
-
scallions
-
slivered almonds
-
craisins
-
sunflower seeds
-
1/2 cup oil
-
1/2 cup sugar
-
1/4 cup apple cider vinegar
-
1 tsp soy sauce

Instructions
Mix dressing ingredients together.
Toss with salad and let chill.
