Dinner Tonight - Shabbos Menu 6/29

I tried several recipes this week from my new cookbook (thanks Tzip!!!) For dinner tonight I am making corn salad, red eggplant, scallion dip, fandango salad, Pastrami knish, sticky chicken drumsticks, salt and pepper noodle kugel, zucchini muffins, spicy green beans, and Tirimisu for dessert. Sticky Drumsticks 

8 drumsticks
salt 
pepper 
onion powder
garlic powder
12 oz apricot jam
1/4 cup teriyaki sauce
1 tbs. brown sugar
1 tsp. cornstarch
1 tsp apple cider vinegar

Preheat oven to 350 degrees. Pat chicken dry and place in a 9x13 pan. Season with salt, pepper, onion and garlic powder. Bake covered 45 minutes. Mix remaining ingredients and pour over chicken. Bake an additional 45 minutes uncovered.

Spicy green beans

2 lbs green beans
1/4 cup olive oil
2 med plum tomatoes diced
6 cloves garlic minced
2 tbs coarse salt
1/2 crushed red pepper flakes 

Heat oil in large skillet. Add beans and saute for 2 minutes. Add in tomatoes garlic salt, and red pepper. cook for an additional 2 minutes. Lower heat and cook covered for 15 minutes. 

Scallion dip

2 bunches scallions sliced
1/2 cup mayo
1 tsp. lemon juice

Place all in a bowl and blend with immersion blender.

    -
    1 lg. eggplant diced
    -
    2 red peppers diced
    -
    1 red onion diced
    -
    1/2 tsp. salt
    -
    1/4 tsp. pepper
    -
    3 cloves garlic
    -
    3 tbs. oil
    -
    1/2 can tomato paste

    Instructions

    roast all ingredients besides tomato paste at 425 degrees for 30-45 mins. puree a bit with tomato paste using hand blender 6 times
